Apricot & Coconut Bliss Balls

Ingredients

1 1/2 cups almonds

1 tsp vanilla extract

1 tbs chia seeds

1 cup dried apricots

1 1/4 cups desiccated coconut 


Method

1. Place all ingredients (except 1/4 cup desiccated coconut) in a food processor or blender and blitz on high, until the mixture comes togeher

2. Scoop tablespoons of mixture from food processor, roll into 14 balls and coat in remaining coconut. 

Note 1 ball = 1 snack
