Healthy Apple Crumble Recipe

Serves: 8
Ingredients: 
  • 7 Apples (chopped into cubes) 

  • 1 Cup of Almond Meal 

  • ⅔ Cup of Desiccated Coconut 

  • ½ Cup of Oats 

  • 2 Tbsp Cinnamon 

  • 1 Tbsp Nutmeg 

  • 2 Tbsp Firmly Packed Brown Sugar (or coconut sugar) 

  • 2 Tbsp Butter or Nuttelex (softened in the microwave)

  • 1 Tbsp Vanilla Essence 


Method

Preheat the oven to 160 degrees C (or 180 fan forced) 

  • Peel and chop apples into cubes. Place apples in a saucepan with 1-2 cups of water (until apples are just covered) and boil for 5 minutes

  • In a separate bowl, combine almond meal coconut, oats, cinnamon and nutmeg and stir until combined.

  • In a separate bowl combine butter and vanilla essence

  • Fold the wet ingredients into the dry ingredients and stir until combined 

  • On a large baking tray, lay out the drained apple. Top with the crumble mixture and bake for 30-40 minutes until golden brown
