Choc Chip Protein Cookies

No matter the question, cookies are the answer - particularly these choc chip protein cookies. So if you want to indulge in a sweet treat sans guilt, stop what you’re doing and bake yourself a batch of these choc chip protein cookies stat! While naturally gluten free, they can be easily adapted to also cater to those who are dairy free.

Ingredients: 
  • 1/2 cup natural peanut butter 

  • ¼ cup coconut sugar 

  • 2 tbsp coconut flour 

  • ¼ tsp pink himalayan sea salt 

  • 1 egg 

  • 1 egg white 

  • 1/2 tsp vanilla extract 

  • ¼ baking soda 

  • ½ cup chocolate protein powder (plant based protein for DF) 

  • ¼ cup dark chocolate chips (or carob chips for DF) 


Directions: 
  • Preheat oven to 180 degrees C. Line baking tray with baking paper and set to the side 

  • In a medium bowl, combine peanut butter, coconut sugar, salt, egg, egg white, vanilla extract and mix until smooth and combined 

  • Once mixture is blended, fold in baking soda, protein powder, coconut flour and chocolate chips 

  • The consistency of the dough will be dependent on the protein powders and nut butter used. If the dough is too runny in consistency, add some more protein powder or coconut flour and if the dough is too thick, add a splash of milk of choice (we like  almond)

  • Portion the cookie dough into small balls and place on the baking treaty. Flatten with fingers and bake for 7-10 minutes
