Serves 4
Olive oil spray
1 red onion, chopped
2 garlic cloves, chopped
1 tbs Italian dried herbs
400g packet of pre-chopped soup vegetables
3 cups vegetable stock
400g tin chopped tomatoes
1 bay leaf
400g tin cannellini beans, drained & rinsed
Pepper, to taste
1 tbs parsley, chopped
2 tbs parmesan, grated
1. Spray a non-stick saucepan with oil and sauté onion, garlic and Italian herbs. Add mixed vegetables and continue sautéing for a few more minutes. Add stock, tomatoes and bay leaves, then bring to a simmer for 10-15 minutes.
2. Add beans and heat through. Adjust seasoning, stir through parsley and sprinkle with parmesan cheese.
