Mexican Stuffed Sweet Potatoes

If you’re on the lookout for some quick and easy dinner inspo, look no further than these mexican stuffed sweet potatoes! Full of flavour but low on effort, they make the perfect weeknight dinner!

Ingredients

  • 2 large sweet potatoes 

  • 1 can of drained black beans 

  • ½ cup of corn kernels 

  • 1 avocado mashed 

  • 1 tsp smoked paprika

  • 1 tsp cumin 

  • 1 red capsicum 

  • ½ an onion diced 

  • 2 garlic cloves grated 

  • Sliced shallots (for garnish) 

  • 2 lime wedges 

  • 1 tbsp oil of choice (olive oil or coconut oil) 

  • Grated cheese (optional) 

  • 4 tbsp unsweetened greek yoghurt or sour cream 


Directions

1. Preheat oven to 200 degrees celsius 

2. Slice sweet potatoes open lengthways and place them on a lined baking tray 

3. Bake for 20-minutes or until sweet potato flesh is soft (might take a little longer) 

4. Heat oil in pan and add onion, garlic and capsicum and saute until golden 

5. Add black beans, corn kernels, paprika and cumin to the pan and stir until combined 

6. Scoop mixture to fill potatoes, sprinkle with grated cheese and bake until cheese is melted

7. Remove from the oven and serve with mashed avocado, greek yoghurt or sour cream, shallots and lime!
