High Protein Green Breakfast Bowl

This delicious breakfast salad with eggs and halloumi is an easy way to help make sure you reach your veggie quota, while also helping you hit your daily protein target, especially if you’re chowing down post-workout.

Ingredients

  • 1tsp extra virgin olive oil

  • 50g baby spinach leaves

  • ½ bunch broccolini (approx. 50g), woody ends removed and chopped in half

  • ½ bunch asparagus (approx. 50g), woody ends removed and chopped into batons

  • 2 tsp lemon juice

  • 1-2 eggs

  • 40g halloumi

  • 1-2 tbs hummus (we recommend Pilpel brand)

  • 1tbs mixed seeds

  • 1tsp Dukkah

  • Salt and pepper


Method

  1. In a large pan heat 1tsp of extra virgin olive oil. Sautee chopped broccolini and asparagus until soft. Season with salt, pepper and lemon juice, then remove from the pan.

  2. Add halloumi to the pan and sauté for 5 minutes or until golden and crispy, and then remove.

  3. Meanwhile, boil the egg/s. Bring a pot of water with egg/s to a boil and leave for 4-6 minutes before transferring to a bowl of cool water.

  4. To serve, spread 1-2tbs hummus onto a plate, top with sautéed vegetables, baby spinach, halloumi, egg/s, seeds and dukkah.
