With the cooler temperatures now officially upon us, now is more important than ever to do everything we can to help ensure we’re supporting our immune systems! And what better way than loading up on turmeric? The superfood is naturally high in antioxidants and has anti-inflammatory properties to help not only support a healthy immune system, but to also aid digestion! This coconut and turmeric and chicken curry is packed full of turmeric and is fast becoming one of our go-to winter dinner recipes!

2 tsp coconut oil
1 brown onion diced
2 garlic cloves, crushed
Knob of ginger, grated
2 chicken breasts, cubed
½ cup coconut milk
½ cup coconut cream
10g coriander (optional)
2 tsp of each: paprika, turmeric and curry powder
Salt and pepper
Service with your choice of brown rice or coconut rice
Heat coconut oil in a large pan before adding onion, garlic and ginger. Cook for 2 minutes. Stir in the spices, salt & pepper until cooked and then remove the mixture from the pan.
Add chicken to the pan and cook until golden brown.
Add the onion and spice mix back into the pan and add the coconut milk and cream and simmer and stir for 5 minutes until combined
Service with your choice of rice and add freshly cut coriander (optional).
