1/2 cup crunchy peanut butter
1/4 cup honey
3/4 cups rolled oats
1 large egg
1/2 teaspoon baking powder
1 Preheat oven to 180 C. Line a baking tray with baking paper.
2 In a small bowl, use a mixer or handbeater to cream peanut butter and honey until whipped and fluffy. Beat in the egg.
3 Add oats and baking powder to mixture and mix well.
4 Roll dough into 1 tablespoon ball and press to flatten on baking tray.
5 Bake for 8 minutes or until cookies are golden brown. Cool cookies on rack and store in an airtight container.
