Cheesy Breakfast Frittata

Tired of your same old breakfast oats? Shake up the way you wake up with this cheesy breakfast frittata that will put a pep in your morning step! 


Ingredients:
  • 1 cup cottage cheese

  • 4 large eggs, whisked

  • 1.5 cups of diced mixed vegetables of your choice (i.e. onion, mushrooms, asparagus, zucchini, capsicum, kale)

  • ¾ cup steamed, diced sweet potato (skin off)

  • ½ cup grated tasty cheese 

  • 1tsp paprika

  • Generous pinch of salt and pepper


Method:
  • Preheat the oven to 180C. Line a frittata dish with baking paper

  • Sautee diced vegetables in a hot pan with 1tsp olive oil until tender

  • In a large bowl combine cottage cheese, whisked eggs, sautéed vegetables, steamed sweet potato, paprika, salt and pepper. Gently stir to combine. 

  • Spoon mixture into lined oven dish, sprinkle with grated cheese, and bake for 30 minutes until set.
