Tired of your same old breakfast oats? Shake up the way you wake up with this cheesy breakfast frittata that will put a pep in your morning step!
1 cup cottage cheese
4 large eggs, whisked
1.5 cups of diced mixed vegetables of your choice (i.e. onion, mushrooms, asparagus, zucchini, capsicum, kale)
¾ cup steamed, diced sweet potato (skin off)
½ cup grated tasty cheese
1tsp paprika
Generous pinch of salt and pepper
Preheat the oven to 180C. Line a frittata dish with baking paper
Sautee diced vegetables in a hot pan with 1tsp olive oil until tender
In a large bowl combine cottage cheese, whisked eggs, sautéed vegetables, steamed sweet potato, paprika, salt and pepper. Gently stir to combine.
Spoon mixture into lined oven dish, sprinkle with grated cheese, and bake for 30 minutes until set.
