Single Serve Chocolate Mud Cake

If you have a raging sweet tooth and crave a little treat after dinner, then this single-serve chocolate mug cake is for you! Not only is it easy to make (even if you have little culinary ability) you can whip it up from ingredients you should usually be able to source straight from your pantry and fridge!

Ingredients

  • 3 tbsp almond meal 

  • 1 tbsp cacao powder 

  • 1-2 pieces of dark chocolate 

  • ¼  tsp baking powder 

  • ½ tsp cinnamon 

  • 1 egg 

  • 1 tbsp sweetener of choice (honey, maple syrup, agave, rice malt syrup) 

  • 2 tsp olive oil or coconut oil 

  • ½ tsp vanilla extract 

  • Pinch of salt 

  • Icing sugar for garnish 


Method

1. Place almond meal, cacao powder, baking powder, cinnamon, broken up dark chocolate and salt into a mug (or a ramekin if you prefer) and stir until all ingredients are combined

2. Add egg, sweetener, olive oil and vanilla extract to the dry ingredients and mix until all ingredients are smooth to form a batter consistency 

3. Make sure there’s at least a 2cm gap between the batter and the top of the mug or ramekin as it will rise in the microwave

4. Cook in the microwave for 60 seconds (note, the cake will rise significantly in the microwave but should settle again once it’s stopped coking)

5. If you prefer a gooey texture in the middle, 60 seconds will be enough, but if you would prefer a firmer texture, microwave for an additional 10-30 seconds 

6. Dust mug cake in icing sugar and eat warm!
