Makes 24
1/2 cup dried apricots
1 tbs cranberries
1 cup almond meal
120g coconut oil
60g cacao powder
2 tbs maple syrup
1/2 cup currants
1/2 cup coconut, shredded
2 tbs dark chocolate, grated
Toppings
2 tbs coconut, shredded
2 tbs almonds, chopped
2 tbs cacao powder
1. Blend apricots and cranberries in food processor until roughly chopped.
2. Add all remaining ingredients (except dark chocolate). Blend well until combined.
3. Shape into 2cm balls and roll in grated dark chocolate.
4. Roll balls into either coconut, almond meal or cacao powder for different flavours.
5. Refrigerate until ready to serve.
