1 cup rolled oats (if gluten-free, use brown rice or quinoa flakes)
2 tbs honey
1⁄4 cup desiccated coconut
1⁄2 cup peanut butter
zest and juice of 1⁄4 orange
40g dark chocolate
1. Pulse oats, honey, coconut, peanut butter, zest and juice in a food processor to combine.
2. Scoop teaspoons of mixture out and roll into 10 balls and place on a tray.
3. Melt chocolate in a heat proof bowl in a microwave for 1 minute and then at 30 second intervals, stirring in between until chocolate is melted.
4. Drizzle chocolate over balls and place in the fridge for 10-15 minutes. Store in an airtight container for up to a week.
