Anzac Day treats!

If you’re looking for the perfect way to show your love and respect for our fantastic country and its soldiers this Anzac Day, attend the dawn service of course, and then get to baking these Anzac Day treats!

We feel that everyone should be able to participate in this tradition, so we have sourced a range of Anzac recipes to suit all dietary requirements, and modified them slightly to make them healthier. We hope you find something that tempts you!


The ‘classic’ Anzac biscuit with a fibre boost

Preheat oven to 180C fan forced, and line a baking tray with paper. In a large pot, gently heat 70g butter and 2tbs honey. Once combined, remove from the heat and add 1tsp bicarb soda, mix well. Add to the pot 1/3 cup wholemeal flour, ½ cup desiccated coconut, 1 cup rolled oats and 1/3 cup flaxseed meal. Stir well to combine. Form into small biscuits and flatten with a spoon, leaving enough room between biscuits for expansion. Bake on tray in oven for 15-20 minutes, or until golden brown. Recipe by The Nutrition Code


Vegan and Dairy Free

Preheat oven to 160C fan forced, and line a baking tray with baking paper. Combine 1.5 cups of rolled oats, ½ cup desiccated coconut, ½ cup chopped almonds, 3tbs extra virgin olive oil, 3tbs honey, 1tsp vanilla extract, ¼ tsp baking soda and 1tbs water. Process until ingredients combined, retaining some texture. Form into small biscuits and flatten with a spoon, leaving enough room between biscuits for expansion. Gluten Free and low fructose

Preheat oven to 120C fan forced, and line a baking tray with baking paper. Combine 1 cup of almond meal, 1 cup of flaked almonds, 1 cup desiccated coconut and 1tsp chia seeds in a bowl, and set aside. In a small pot combine ¼ cup rice malt syrup and ¼ cup butter and heat gently. Mix 1/2tsp bicarb soda with 1tbs water then pour into the pot. Pour the contents of the pot into the dry mixture and stir to combine well. Form into small biscuits and flatten with a spoon, leaving enough room between biscuits for expansion. Bake on tray in oven for 30 minutes, or until golden brown. Recipe by Taryn Rucci.


Low sugar Anzac Biscuits

Preheat oven to 180C fan forced, and line a baking tray with paper. Combine 1 cup wholemeal flour, 1 cup rolled oats, ½ cup shredded coconut and ½ cup powdered organic stevia in a bowl, set aside. In a small pot over heat, melt together 1tbs honey/golden syrup and 100g butter or coconut oil. Mix ½ tsp bicarb soda with 1tbs water then pour into the pot. Add contents of the pot to the dry mixture and stir together. Form into small biscuits and flatten with a spoon, leaving enough room between biscuits for expansion.
