¼ cup cottage cheese
½ - 1tsp horseradish cream (depending on your liking)
Zest of ¼ of a lemon
1 tsp dill leaves
1 medium zucchini, cut into ribbons
4 slices smoked salmon, cut into 3cm strips
Place cottage cheese, horseradish, zest and dill in a small bowl and mix to combine.
Place zucchini on a board, lay salmon on top and spread cottage cheese mixture onto the salmon. Roll zucchini and salmon to form a roll. Repeat until all ingredients have been used and garnish with remaining lemon and dill.
