Banana and Ricotta Hotcakes


  • 1 cup ricotta 

  • 2 large eggs 

  • 3 tbsp flour (plain or gluten-free) 

  • 1 tsp vanilla extract 

  • 1 banana (sliced) 

  • 2 tsp honey or maple syrup 


  • Blend cheese, eggs and flour until smooth 

  • Heat a nonstick fry pan over moderate heat and cook 2 tablespoons of mixture per pancake 

  • Cook for 1-2 minutes or until golden brown 

  • Flip and cook the other side 

  • Divide between 2 plates and top with honey
