1 cup ricotta
2 large eggs
3 tbsp flour (plain or gluten-free)
1 tsp vanilla extract
1 banana (sliced)
2 tsp honey or maple syrup
Blend cheese, eggs and flour until smooth
Heat a nonstick fry pan over moderate heat and cook 2 tablespoons of mixture per pancake
Cook for 1-2 minutes or until golden brown
Flip and cook the other side
Divide between 2 plates and top with honey
